Food for thought

Students had to complete an end of semester project in which they prepared, catered, and served a wonderful lunch for the Ceria M Travis Academy Executive Office and the Travis Vocational High School staff.

Travis Vocational High School completed its second year of the Vocational Food Service Program. Under the direction of Culinary Arts Instructor Mr. Eric Allen, 20 students gained a tremendous amount of knowledge about the various aspects of the food service industry.

This is one of the several strands in their vocational model that helps prepare students for job readiness.

The class was in session three times per week and had both a written and hands-on component. Students were taught many important areas such as proper temperatures, cleanliness, food preparation, and cross contamination. They also completed a written narrative describing their experience and how it might be valuable in the future.

One student in the program, Antonia Moss, has been accepted into the culinary arts program at Cordon Bleu Culinary School. She stated, “I didn’t think this was something I wanted to do. I know I like to eat, but I didn’t realize how much fun it could be”.

Another student, Rodney Lee, completed the program successfully and has found beneficial internship in the kitchen Ruby Gee’s, a restaurant in Milwaukee.

The students had to complete an end of semester project in which they prepared, catered, and served a wonderful lunch for the Ceria M Travis Academy Executive Office and the Travis Vocational High School staff. Ms. Pace, Administrative Assistant stated, “I think the students were awesome. It allowed me to see them in a totally different light. They were really professional.”

The Vocational Food Service Program will continue next school year.

We anticipate its continued growth.
